My go to cheese burger

I’ve cooked a lot of burgers in my time, this is my go to simple classic cheese burger that I cook just about every week. Super easy, super tasty.

Ingredients:

150 g 100% beef mince. go for the 20% fat not the super lean. You need the fat to bring out the flavour

Burger cheese

dill pickles - sliced

tomato - sliced

red onion - sliced

potato bun - these can be hard to find, so just use either a milk bun or brioche roll

american mustard

lettuce - i like butter lettuce but you can use what ever your preferred lettuce is.

salt and pepper

burger sauce:

mix equal parts:

ketchup

american mustard

mayo - I use kewpie but any mayo will do

pickle juice

method:

heat up a frying pan or cast iron pan, spread a little mayo or butter on the buns and toast (insides only), put aside. squash your burger patty until about 1cm thick (i use a pot or another pan to squash evenly), place the burger patty in a super hot frying pan, season with a bit of salt and pepper. Wait until the juices start to form on top of the patty before flipping over. As soon as you flip it, season with salt and pepper then put the cheese on top, leave for a couple of minutes and then remove from heat, leave it to sit in the hot pan while you assemble the bun.

Bottom of the bun, burger sauce (about 1/2 tablespoon), burger w’cheese, mustard, dill pickle, onion, tomato, lettuce, burger top.
